Here’s how to make everything:
1. For the shrimp, I pat them down with a paper towel then tossed them with some olive oil, pink Himalayan salt, ground pepper, smoked paprika, smoked chili, and garlic powder. You can get creative and use whatever you want. Don’t be afraid to experiment.
2. Cook the shrimp for 60-75 seconds on each side. Don’t over do it as it will become rubbery.
3. For the “noodles” I spiralized 1 zucchini and tossed in some spicy cashew cheese sauce. Warmed it up for a couple of minutes on medium heat. You can use any type of pasta or cheese sauce you’d like.
4. Topped with some more red chili flakes and fresh parsley.

GRILLED CHILLI LIME CHICKEN FAJITA SALAD
3 tablespoons olive oil
100ml (just over ⅓ cup) freshly squeezed lime juice
2 tablespoons fresh chopped cilantro
2 cloves garlic, crushed
1 teaspoon brown sugar
¾ teaspoon red chilli flakes (adjust to your preference of spice)
½ teaspoon ground Cumin
1 teaspoon salt
4 chicken thigh fillets, skin removed (no bone)
½ yellow bell pepper, deseeded and sliced
½ red bell pepper, deseeded and sliced
½ an onion, sliced
5 cups Romaine (or cos) lettuce leaves, washed and dried
2 avocados, sliced
Extra cilantro leaves to garnish
Sour cream (optional) to serve
Whisk marinade ingredients together to combine. Pour half the marinade into a shallow dish to marinade the chicken fillets for two hours if time allows. Refrigerate the reserved untouched marinade to use as a dressing.
Heat about one teaspoon of oil in a grill pan or skillet over medium-high heat and grill chicken fillets on each side until golden, crispy and cooked through. (Grill in batches to prevent excess water being released.) Once chicken is cooked, set aside and allow to rest.
Wipe pan over with paper towel; drizzle with another teaspoon of oil and fry pepper and onion strips until cooked to your liking.
Slice chicken into strips and prepare salad with leaves, avocado slices, peppers, onion strips and chicken. Drizzle with remaining marinade/dressing and serve with (optional) extra cilantro leaves and sour cream.

I recently read an article (that my angel of a therapist sent me) on this topic & it was so eye opening that I wanted to discuss it with you all … Essentially, the law states that when you want to get involved in something new (or WITH someone new), in any capacity, you must respond with a with a “F*ck Yes” in order to proceed.

When you're craving chocolate, but wanna keep it low-key healthy: My Big Fat Greek Mousse (inspired by @smiling_notes). ⠀⠀⠀⠀⠀⠀⠀⠀⠀
To Get: 3/4 cup greek yogurt; 1/2 cup unsweetened vanilla almond milk; 1/2 cup @Lilys_Sweets dark chocolate chips; 1 tbsp honey; 1 tsp vanilla extract ⠀⠀⠀⠀⠀⠀⠀⠀⠀
To Do: Pour milk in a saucepan on low heat; when the milk warms up, add chocolate chips and stir until they melt (don’t bring milk to a boil); once choc chips are melted, remove from heat and let rest for 3-5 min; add honey, vanilla extract, and greek yogurt and mix (there should be no lumps); pour into ramekins and let chill for at least two hours
