The most delicious breakfast dish ever!
Often people say eggs are boring or their sick of eating the same old breakfast everyday. Here's an egg dish I never get bored of, I could literally eat it everyday. It's full of flavour, depth, spice & texture.
Here's an easy recipe for you to try:
(serves 3 people)
-1 Onion - finely diced
-1 Garlic Clove - finely chopped
-1 Red Pepper - finely diced
-1 Sachet Tomato Paste
-2 Tins Crushed Tomatoes
-1/4 cup Water
-1 tsp Olive Oil
-2 tsp Salt
-1.5 tsp Cinnamon
-2 tsp Corriander Powder
-2 tsp Cumin Powder
-1 tsp Fennel Seeds
-2 tsp Sugar
-1/4 teaspoon Cayenne Pepper or Chilli Flakes- (if you want hot spice)
•Fry off the onion, garlic & red pepper in the oil until they soften.
•Add all the spices, salt, sugar & tomato paste to the onions & continue to fry for 2 minutes.
•Pour in the crushed tomatoes & water. Reduce the heat & let it simmer for about 10-20 minutes until the sauce thickens.
•Take the back of a spoon & make a small well near the edge of the pan. Gently crack the egg in & repeat all around the pan.
•If you pan goes in the oven - place it in at 180c for 5 minutes until the eggs just set.
•If you pan doesn't go in the oven - place a lid over it, turn the heat right down & let it cook until the eggs have just set.
Serve with spinach & toast on the side.
